A native of upstate New York, Shawn Applin’s first culinary influence came from his grandmother and the rustic Sunday suppers she used to prepare for the family. Later, after graduating from the Culinary Institute of America in New York, Shawn moved out west and put that ethos to work at restaurants including San Francisco’s Fog City Diner and Scala’s Bistro, and Seattle’s Flying Fish, where he worked alongside James Beard Award-winning chef Christine Keff. When he’s not in the Outlier kitchen, Shawn prefers to spend his time hitting the links or sailing the Caribbean.
